Steak and Onion Stir Fry

This is a great idea for a weekday "meal in a hurry": it's really quick to make, inexpensive, nutritious, and it's really good too.

 
Ingredients:
Recommend this recipe to a friend

1/2 pound round steak
2 small unpeeled potatoes
2 small onions
1 clove garlic
1/4 pound fresh mushrooms
1 cup frozen peas
1 cup fresh or frozen green beans
2 tablespoons olive oil
2 tablespoons butter
1/4 teaspoon thyme
Salt and pepper

Steak and Onion Stir Fry
Directions:

Slice meat into bite size strips. Scrub potatoes and cut into 1/2 inch wedges. Slice onions and separate into rings. Mince garlic. Thickly slice mushrooms. Measure out the peas. Slice fresh beans or measure out frozen beans.

In a large skillet or wok heat oil and stir fry the meat for about 2 minutes. Add the butter, heat to melt it, and then add the potatoes. Stir fry until they start to brown, about 4 minutes.

Add the remaining ingredients and stir fry until the vegetables are heated through and the meat is done, about 4 more minutes. Makes 2 to 4 servings.
