Caramel Apple Cake

This recipe is from Kathy of New Brunswick, Canada, who writes, "This is an ideal cake for lunchboxes. Wrap individual pieces and freeze. It will be thawed by noon. It is also great anytime."

 
Ingredients:
Recommend this recipe to a friend

1/2 cup soft margarine or butter
1 cup sugar
2 eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup sour cream
2 cups diced peeled apples
1/2 package toffee bits

Topping:
1/3 cup flour
2 tablespoons brown sugar
1/4 cup margarine or butter
1/2 package toffee bits
1/2 cup white chocolate chips

 
Directions:

In a large bowl, cream margarine, sugar, eggs and vanilla until light and fluffy.

Combine flour, baking powder, baking soda, and salt. Add to creamed mixture alternately with sour cream, making 3 dry and 2 liquid additions.

Fold in apples and toffee bits. Spread batter evenly in greased 9 x 13 inch cake pan.

Topping:
Combine flour, brown sugar and margarine. Mix until crumbly. Stir in toffee bits and white chocolate chips. Sprinkle evenly over batter.

Bake at 350 degrees F. for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean.
