Quick Coconut Oatmeal Cookies

You mix all the batter ingredients up in one bowl - hence they are "quick". And they are also very good - a nice crisp oatmeal cookie with the tasty addition of coconut.

 
Ingredients:

1 1/4 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sugar
1/2 cup brown sugar
1/2 cup butter
1 egg
1 teaspoon vanilla
1 cup oatmeal
1 cup coconut

Quick Coconut Oatmeal Cookie
Directions:

Mix flour, baking powder, baking soda and salt in a large mixing bowl.

Add sugars, butter and egg. Mix until smooth. Stir in vanilla. Fold in oatmeal and coconut.

Shape into balls and place 2 inches apart on ungreased cookie sheet. Bake at 350 degrees F. for 12 to 15 minutes.
