Bolognese Sauce

Another good recipe to "stock up" on when the tomatoes are plentiful. You can multiply the recipe to suit how many tomatoes you have...and the size of your pot!
 
Ingredients:
Recommend this recipe to a friend

2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
1 stalk celery, diced
1 carrot, diced
1 pound ground beef
3 cups fresh tomatoes, peeled and chopped
1 teaspoon basil
1 teaspoon oregano
1 teaspoon parsley
2 bay leaves
Salt and pepper
1 can (13 oz.) tomato paste
1/2 cup beef stock
1/2 cup red wine

 

 
Directions:

Heat oil in a large pot. Add onion, garlic, celery and carrot. Cook for 5 minutes.

Add ground beef and cook until browned. Drain off excess fat.

Add remaining ingredients. Bring to a boil and simmer, uncovered, for 1 hour.

Remove from heat, remove bay leaves. Serve with pasta, or cool and freeze.
