Joe's Salad Dressing

"This came from my Italian uncle Joe Lirio. I make
it once a day with evening meals and when I serve it to
guests, they want to know how it was done." |

| Ingredients: |

Any
salad ingredients
Salt and pepper
Vinegar
Olive oil
|

| Directions: |
|
The
order here is very important!
- Add
salt and pepper to your salad ingredients, mix about
12 times.
- Add
vinegar, mix about 12 times.
- Add
olive oil, mix about 12 times.
This
method allows you to:
- Season
the salad uniformly.
- Add
flavor uniformly. Applying the vinegar first allows
the flavor to penetrate the cells of the greens. Also
it doesn't matter if the greens are a bit damp.
- The
oil coats the outside of the leaves allowing the flavor
to remain in the salad. With a premixed salad dressing,
the oil prevents the penetration into the salad.
