Uncle Joe's Salad Dressing

This recipe is from Penny Heavilin of New Zealand, who writes "This came from my Italian uncle Joe Lirio. I make it once a day with evening meals and when I serve it to guests, they want to know how it was done."
 
Ingredients:
Recommend this recipe to a friend

Any salad ingredients
Salt and pepper
Vinegar
Olive oil

 

 
Directions:

The order here is very important!

  1. Add salt and pepper to your salad ingredients, mix about 12 times.
  2. Add vinegar, mix about 12 times.
  3. Add olive oil, mix about 12 times.

This method allows you to:

  • Season the salad uniformly.
  • Add flavor uniformly. Applying the vinegar first allows the flavor to penetrate the cells of the greens. Also it doesn't matter if the greens are a bit damp.
  • The oil coats the outside of the leaves allowing the flavor to remain in the salad. With a premixed salad dressing, the oil prevents the penetration into the salad.
