Cheddar Ranch Mashed Potatoes

This recipe is from Lee Mittelstadt of Winston Salem, USA, who writes, "I threw this together during my son's "Cheese" phase when he was 3 years old and would eat nothing unless it had cheddar cheese on it. He's now almost 13 and won't eat any mashed potatoes except these! At Thanksgiving, this recipe has replaced my grandmother's that the family used for 80 years."

5 medium potatoes
1/2 cup shredded sharp cheddar cheese
1/2 stick (1/4 cup) butter (more or less to taste)
1 teaspoon salt (more or less to taste)
1/2 package dry Ranch Dressing mix
1/4 cup milk

Directions:

Peel potatoes. Cut in large cubes and boil in salted water until soft. Drain.

Add remaining ingredients. Mix with potato masher or electric mixer. Add more milk as needed for desired consistency.

Return pan to heat, cover and simmer 5 - 10 minutes to reheat potatoes.
