Potato Finger Dumplings

This recipe is from Nancy J. of Chicago, who writes, "This was given to me in 1956 by a Polish farm wife, a neighbor and a good friend who shared many of her ethnic recipes with me. You will enjoy this one."

 
Ingredients: Recommend this recipe

1 cup day old mashed potatoes
1 cup flour
1 egg
Dash of salt

 
Directions:

Bring a pot of water to a boil.

Mix all ingredients well. Take a small amount of the mixture, the size of a walnut, and roll into a "finger". Put in the pot and when they rise to the top, cook for 3 or 4 minutes and scoop out and drain.

Put in a bowl and drizzle melted butter over to keep them from sticking together.
