Oven Roasted Potatoes

You can't beat potatoes roasted in the pan with roast beef. Still, if you are not having roast beef, these are the next best thing. This is a basic recipe which you can vary by using other herbs or spices in place of the paprika (try seasoned salt for spicy fries, or 1 teaspoon of rosemary or Italian seasoning).

Ingredients:

2 pounds baking potatoes (about 4 potatoes)
2 tablespoons olive oil or melted butter
2 teaspoons paprika
1/2 teaspoon salt
1/4 teaspoon pepper

Oven Roasted Potatoes
Directions:

Peel potatoes and cut into large chunks, wedges or fries. Toss with oil, paprika, salt and pepper.

Spread out in a single layer on a greased baking sheet. Bake at 400 degrees F. for 45 to 60 minutes, until golden and tender. Makes 4 servings.
