Combine
flour, sugar, baking powder, salt and lemon rind in
food processor bowl. Add butter and process until mixture
resembles coarse meal. Add egg and process briefly to
combine.
Spread
2/3 of the mixture in a greased 8 inch square baking
pan. Pat down firmly. Spread jam over top, and sprinkle
remaining batter over jam.
Bake
for 25 minutes at 350 degrees F. until well browned.
