Jam Squares

Jam is a classic ingredient in squares - this is a simple jam square. You can vary it by using different jams for the filling.
 
Ingredients:
Recommend this recipe to a friend

1 cup plus 2 tablespoons flour
1/2 cup sugar
1 teaspoon baking powder
1/8 teaspoon salt
Grated rind of 1 lemon
1/3 cup butter
1 egg, beaten
1/2 cup raspberry jam

 

 
Directions:

Combine flour, sugar, baking powder, salt and lemon rind in food processor bowl. Add butter and process until mixture resembles coarse meal. Add egg and process briefly to combine.

Spread 2/3 of the mixture in a greased 8 inch square baking pan. Pat down firmly. Spread jam over top, and sprinkle remaining batter over jam.

Bake for 25 minutes at 350 degrees F. until well browned.
